Title: Mini servi-v-twin?

I'm more of a purest... but looking at what you guys do to these bikes has got me thinking... what if you built a v-twin?
I found a sweet engine that may fit the bill, a 250cc / 16.5 HP LIFAN?

Those engines look pretty nice.  If I were to attempt a v-twin conversion, I would follow the lead of the cushman guys and use a Briggs Vangaurd motor.

you think maybe the 5 speed tranny might be a little over-kill?

Yes.  The Vangaurd cushmans ride all day at highway speeds without issue.  To do this kind of speed on a simplex, you would have to change tires, wheels and especially the brakes to modern motorcycle.
